Morton Hamburger Sausage
Smoke some flavorsome meat sausages with this hamburger recipe. Serve it as an entrée or enjoy with the evening snacks, these sausages can serve best for every meal. For ease and convenience, you can freeze its make-ahead even for days. Serves: 4 Prep Time: 10 minutes Cooking Time: 4 hours Ingredients: 2 ½ lbs. lean hamburger meat 1 tablespoon Morton sugar cure 2 1/2 teaspoons Morton tender quick 1 teaspoon mustard seeds 1 teaspoon liquid smoke 1 teaspoon peppercorns 1/2 teaspoon garlic powder 1 teaspoon coarse pepper 1 teaspoon crushed red pepper Instructions: Mix all the ingredients in a large bowl. Refrigerate the sausage for 3 days while mixing twice a day. From 2-inch diameter sausage rolls using this mixture. Preheat the smoker to 225 degrees F. Add water to the filling pan of the smoker. Place the dripping pan and add wood chips to the side drawer. Set the sausages in the middles rack of the smoker. Smoke until meat’s internal temperature reaches 160 degrees F. Serve warm.
